Sauce Methods

Teriyaki Sauce

Honteri adds a beautiful lustre to the sauce and a savoury sweetness that is lost if you just use sugar. Japanese cooking tends to cook with the teriyaki sauce, but you can thicken or reduce to use as a marinade or glaze as required.

1 part Honteri + 1 part soy sauce

Tsuyu Broth / Finishing Sauce

An aromatic Tsuyu broth that can be used as a finishing sauce for many dishes such as agadeshi tofu, donburi, tortellini, and dumplings.

1 part Honteri + 1 part soy sauce + 3 part dashi

Asian Dipping Sauce

With aromatic Asian flavours.

1 part Honteri + 1 part soy sauce + 1 part rice wine vinegar + 1 part sesame oil

Add garlic puree, chilli oil to taste

Garnish with sesame seeds, sliced spring onions, grated ginger and chilli flakes for texture

Asian Sticky Glaze

With aromatic Asian flavours.

As above, 1 part Honteri + 1 part soy sauce + 1 part rice wine vinegar + 1 part sesame oil

Reduce for 3 minutes to thicken to create a glaze like texture.
