Once the sugar is dissolved, turn the heat to low and continue to simmer until thickened (maximum 15 minutes). Turn the heat off and let it cool.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Eel preparation: live eels are generally split down the back or belly, gutted, and boned, butterflied.
